For the cookies

½ cup Rice flour
½ cup Gluten free Oat Flour
½ teaspoon Bicarbonate of soda
¼ teaspoon Himalayan Salt
1 teaspoon cinnamon
¼ teaspoon ginger
4 Tablespoons Coconut Oil
¼ cup Date Syrup
½ cup Organic Coconut Sugar
½ cup Pumpkin Puree
1 cup Vegan Dark Chocolate chips

Instructions

Preheat the oven to 180 degrees Celsius.
In a large bowl, add together all the dry ingredients.
Add in the wet ingredients and whisk well.
Fold in the chocolate chips.
Let the dough rest in the fridge for 1 hour or until it hardens and becomes easy to form into balls.
With an ice cream scoop, scoop balls of cookie dough onto a baking paper lined baking sheet.
Bake the cookies for 12 - 15 minutes until lightly browned.
Let cool before serving or enjoy warm and soft.
